Sponge White Bread
Ingredients
Directions
In a large bowl, combine warm water and enough flour to create a stiff batter.
Add the yeast and let the mixture rise in a warm place until very light.
Stir in the salt and enough additional flour to shape the dough without overmixing.
Allow the dough to rise again in a warm place until light, but do not let it rise too long to avoid sourness.
If the sponge becomes acidic, add a pinch of baking soda. If the yeast is fresh, it’s better without it.
