Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body, pulp, and flavour of the ketchup.
Wine vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Coarse sea salt
Draws moisture out of the tomatoes and seasons the base.

The step that matters

Boil the tomatoes gently for 2 hours. Long, gentle simmering evaporates water and concentrates the tomato flavour and body. Boiling too hard can scorch the bottom of the pan and give a burnt taste, so the heat should stay low and the mixture should be stirred.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, clove, wine, vinegar, brandy):

  1. Capsicumfits better
  2. Shallotfits better
  3. Tomatothe original
  4. Mustardfits about as well

Fit is the average pairing score against pepper, clove, wine, vinegar, brandy. Candidates are from the same food group and used in at least 100 recipes.
