Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean raw beef
Releases flavor and gelatin into the broth during long simmering.
Egg white and shell
Binds fine particles and impurities so they can be strained out, clearing the broth.
Onion
Browning adds deeper, savory aroma to the broth.

The step that matters

Boil for 5 minutes after adding the egg. The egg must be stirred in before boiling so it can coagulate and trap cloudy particles. Boiling briefly, then straining, clarifies the soup. Boiling too long or stirring too hard can break up the raft and cloud the broth again.

Swap the mace

How well each one fits the dish's main ingredients (butter, onion, beef, egg, clove):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against butter, onion, beef, egg, clove. Candidates are from the same food group and used in at least 100 recipes.
