Why it works: Barley and beef work together. They rank in the top 7% of all ingredient pairs, and cooks put them together in 458 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pearl barley
- Swells as it cooks and, once sieved, thickens the soup body.
- Cream
- Adds richness and a smooth, mellow body to the broth.
- Knuckle of veal, chicken, or turkey bones
- Releases gelatin and flavour into the water, forming the base stock.
- Beef balls
- Add savoury substance and meaty flavour to the finished soup.
The step that matters
Cooking the barley until tender. Barley must cook fully so it softens; undercooked grains stay chewy and do not thicken the soup properly when part of it is sieved.
