What each ingredient does

Slices of undercooked roast beef
Forms the wrapping and provides the main meat flavour that the stuffing and gravy complement.
½ cup breadcrumbs
Absorb moisture and give the stuffing body so it holds together inside the roll.
Good brown gravy
Keeps the beef moist during simmering and adds savoury, browned flavour to the dish.

The step that matters

Rolling the slices tightly. Loose rolls let stuffing fall out and gravy seep in unevenly during simmering. Tight rolls and secure string keep the filling in place and the olives intact.
