What each ingredient does

Ox-tails
Provide the meat and collagen that become tender and give the stew its body during long simmering.
Butter and flour
Form a roux that thickens the gravy and gives it a smooth, glossy body.
Lemon juice
Adds acidity that brightens the rich, savory flavour of the gravy.
Mushroom catsup
Adds savory, umami depth to the gravy.

The step that matters

Remove the scum. Skimming foam that rises when the stew first boils keeps the broth clean and clear and prevents impurities from settling back into the gravy.
