What each ingredient does

Kidneys
Provide the meat that is coated and broiled as the main dish.
Butter
Carries the seasonings and adds richness and moisture to the coating.
Mustard
Adds sharp, tangy flavor that cuts through the richness of the kidneys.
Cracker dust
Forms a crisp, browned crust on the outside of each slice when broiled.

The step that matters

Melt the mixture gently without heating it. The record's wording is contradictory: melting implies heat, yet the instruction says not to heat it. Melting butter too hot can separate it and scorch the milk solids, so keep it just soft and spreadable.

Swap the mustard

How well each one fits the dish's main ingredients (butter, lemon):

  1. Shallotfits better
  2. Asparagusfits better
  3. Leekfits better
  4. Mustardthe original

Fit is the average pairing score against butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
