Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Directions

Stew the pork

  1. Cover the pork with cold water in a pot.

What each ingredient does

Lean pork
Slow stewing breaks down connective tissue, leaving the meat tender and easy to pull apart.
Potatoes
Parboiled slices soften in the gravy, adding body and a starchy, tender texture.
Flour
Its starch swells in the hot liquid, thickening the gravy.
Butter
Adds richness and a smooth, glossy mouthfeel to the gravy.
Biscuit dough
Rises and browns in the oven, forming a soft, golden crust over the filling.

The step that matters

Stir in butter rolled in flour. Flour clumps if it hits hot liquid unevenly. Stirring the butter and flour into the gravy until smooth lets the starch disperse and swell evenly, so the gravy thickens without lumps.
