What each ingredient does

Rabbit
Provides the main meat, which becomes tender as it simmers slowly in liquid.
Onions
Add sweetness and body to the gravy as they soften during stewing.
Butter and flour
Thicken the gravy, giving it a smooth, rich body.
Mushroom catsup
Adds savory, umami depth to the gravy.

The step that matters

Thicken the gravy with flour and butter. Flour must be cooked in the hot liquid for a while to lose its raw taste and thicken fully; adding it too late or without enough stirring can leave lumps or a pasty flavor.
