What each ingredient does

Veal breast
Forms the main body of the galantine and becomes tender through long simmering.
Sausage meat
Adds fat and savoury richness to the stuffing, keeping the filling moist.
Bread-crumbs
Absorbs juices and binds the stuffing so it holds together when sliced.
Gelatine
Sets the stock into a glaze that gives the cooked meat a glossy, firm coating.

The step that matters

Wrap and tie the veal tightly before boiling. A firm, even wrap keeps the filling compact and the roll's shape intact. Loose wrapping lets the stuffing shift and can leave gaps or an uneven slice.

Swap the walnut

How well each one fits the dish's main ingredients (veal, meat, ham, bread, pepper, nutmeg):

  1. Chestnutfits about as well
  2. Walnutthe original
  3. Beansfits about as well
  4. Peasfits less well

Fit is the average pairing score against veal, meat, ham, bread, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
