What each ingredient does

Flour
Browns in the roasting pan fat and thickens the liquid into a smooth sauce.
Giblets
Provide the main savoury meat flavour and the chopped pieces that give the sauce body.

The step that matters

Add the water slowly while stirring. Adding the liquid gradually to the browned flour lets the starch disperse evenly, so the sauce thickens smoothly without lumps.
