What each ingredient does

Chicken
Forms the main body of the dish, cooking to tender meat under gentle heat.
Soft butter
Adds fat and moisture that helps the skin brown and keeps the meat juicy.

The step that matters

Turning to brown the skin side. Cooking slowly under a cover keeps the meat moist, but the skin only browns once exposed to direct heat. Turning at the right moment gives even colour without drying the flesh.
