Broiled Chicken on Toast

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Cook the chicken

  1. Broil the chicken until thoroughly cooked.

  2. Remove the chicken and place it in a square tin or dripping pan.

  3. Butter the chicken well and season with salt and pepper.

  4. Place the chicken in a 400°F (200°C) oven for a few minutes.

Assemble and serve

  1. Moisten the bread and lay slices on a platter.

  2. Place the chicken on top of the toast.

  3. Add cream or milk to the gravy in the pan.

  4. Thicken the gravy with flour and pour it over the chicken.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole chicken
Provides the main cooked meat that the dish is built around.
Butter
Adds fat for richness and helps the chicken brown and taste savoury.
Bread
Forms the base and soaks up the juices and gravy under the chicken.
Cream or milk
Adds moisture and richness to the gravy.
Flour
Its starch thickens the gravy so it coats the chicken and toast.

The step that matters

Thicken the gravy with flour and pour it over the chicken.. Flour starch only thickens fully when heated in liquid. If it is added without being mixed smoothly first, it forms lumps, and the gravy stays thin unless it is kept hot long enough for the starch to swell.
