Why it works: Nutmeg and mace are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 6,557 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Venison Pie Oe Pastey
Ingredients
Directions
Cut the venison into pieces, including fat and lean meat.
Place bones and trimmings in a stew pan with water or veal broth, salt, and pepper. Simmer until a good gravy forms, then strain.
Make a rich pastry and roll it out thick.
Cover the bottom and sides of a deep dish with the pastry.
Season the venison with salt, pepper, nutmeg, and mace, then place it in the dish.
Pour the prepared gravy and a ⅓ cup of port wine over the meat.
Dot the top with bits of butter rolled in flour.
Cover with a thick lid of pastry and decorate with leaves and flowers using a tin cutter.
Bake for 2 hours or more, depending on size.
Brush the top with beaten egg before it finishes baking to achieve a golden brown color.
