What each ingredient does

Chicken
Provides the main body and structure once minced and pureed into the mixture.
Eggs
Yolks bind the mixture, while whipped whites trap air that lifts the soufflé as it steams.
Butter
Adds richness and a smooth, tender texture to the chicken mixture.
Double cream
Adds moisture and lightness when half-whipped and folded in.

The step that matters

Folding in the whipped whites and cream. Folding gently keeps the air bubbles in the whipped egg whites and cream. Those bubbles expand during steaming and give the soufflé its lift, so heavy stirring deflates it and leaves it dense.
