Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Allow the cooked chicken and sweetbreads to cool, then chop the sweetbreads finely.

Make the sauce

  1. In a saucepan, melt the butter over medium heat.

  2. Add the flour to the melted butter and stir until dissolved.

  3. Gradually add the heated cream, stirring until thickened.

  4. Season with salt and pepper, then mix in the chicken and sweetbreads.

Bake and serve

  1. Pour the mixture into a baking dish, top with bread crumbs and dot with butter.

  2. Bake at 350°F (175°C) for 20 minutes.

  3. Garnish with parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms a roux with the butter that thickens the cream into a smooth sauce.
Cream
Provides the liquid base and richness that the flour thickens into a creamy sauce.
Butter
Enriches the sauce with fat and adds flavor and golden browning to the topping.
Cooked chicken
Supplies the main protein and substance of the creamed mixture.

The step that matters

Gradually add the heated cream, stirring until thickened. Adding cream slowly while stirring keeps the flour evenly dispersed, preventing lumps and producing a smooth, thick sauce.
