Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the main acidity and bright lemon flavor of the ice.
Sugar
Sweetens the ice and, dissolved in water, forms the syrup base.
Water
Dissolves the sugar into a syrup that gives the ice its liquid base.
Egg white
Beaten until stiff and folded in, it lightens the mixture and makes it white and frothy.
Orange
Adds citrus aroma and sweetness alongside the lemon juice and rind.

The step that matters

Fold the beaten egg white into the mixture. Egg white must be beaten until stiff and folded in gently. Overmixing or deflating it removes the air that makes the ice light and frothy.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
