Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds by pouring boiling water over them and letting them sit until the skins slip off easily.

  2. Spread the almonds on a baking sheet and add small lumps of butter.

Bake and season

  1. Bake in a hot oven at 400°F (200°C), stirring occasionally.

  2. When the almonds are golden brown, remove from the oven.

  3. Sprinkle with fine salt and cayenne pepper, cover with another baking sheet, and shake thoroughly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Form the crunchy body of the snack and brown to a golden, nutty flavour in the oven.
Butter
Adds fat that helps the almonds brown evenly and carries a rich flavour.
Fine salt
Seasons the almonds and sharpens their roasted flavour.

The step that matters

Removing the almonds when golden brown. Almonds darken quickly near the end of baking, and nuts keep cooking from residual heat on the pan. Pulling them at the first golden colour prevents bitterness from over-browning.

Swap the almond

How well each one fits the dish's main ingredients (butter, pepper):

  1. Walnutfits about as well
  2. Black-eyed peafits about as well
  3. Almondthe original
  4. Lima beansfits about as well

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
