Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Place the tomatoes in the oven until hot.

  3. Squeeze the tomatoes through a strainer.

Make the sauce

What each ingredient does

Tomatoes
Form the bulk of the sauce and provide its body and fresh tomato flavor.
Brown sugar
Adds sweetness that balances the acidity and sharpness of the vinegar and mustard.
Cider vinegar
Adds acidity that gives the ketchup its tang and helps keep it bright.
Mustard
Adds sharp, pungent flavor that gives the ketchup its characteristic bite.
Cornstarch
Thickens the sauce as it heats, giving it a spreadable, ketchup-like texture.
Red peppers
Adds sweet, vegetal flavor and some body to the sauce.

The step that matters

Start the 1-hour cook timer only when the mixture begins to boil. Cornstarch needs to reach a full boil to thicken properly, and the sauce reduces during simmering. Timing from the boil keeps the cooking time consistent so the texture is right.
