What each ingredient does

Apples
Break down into a soft pulp that gives the chutney its body.
Tomatoes
Add moisture and soft body as they cook down into the pulp.
Brown sugar
Adds sweetness and helps balance the sharpness of the vinegar.
Vinegar
Provides acidity that preserves the chutney and gives it tang.
Mustard seed
Adds pungent flavor, and grinding or boiling it in vinegar releases its sharpness.
Raisins
Add chewy texture and concentrated sweetness.

The step that matters

Cook the apples and tomatoes until soft. They must be cooked fully soft before mashing so the fruit breaks into a smooth pulp. Undercooked pieces stay firm and make the texture grainy.
