What each ingredient does

Beef stock
Forms the liquid base that sets into the jelly when cooled.
Egg whites and shells
Bind the minced beef and collect impurities so the stock clears when strained.
Lean beef
Adds meaty flavour and, with the egg whites, helps clarify the stock.
Gelatin
Provides the setting structure that turns the liquid into a firm jelly.
Sherry
Adds aromatic flavour and a touch of sweetness to the finished jelly.

The step that matters

Adding the egg and beef mixture to cold stock. The egg whites and minced beef must be mixed into cold stock before heating so they can trap impurities as the stock warms. Adding them to hot stock can cook them on contact, leaving the stock cloudy and harder to clarify.

Swap the mace

How well each one fits the dish's main ingredients (beef, egg, gelatin, vinegar, sherry, clove, celery):

  1. Tarragonfits better
  2. Cinnamonfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against beef, egg, gelatin, vinegar, sherry, clove, celery. Candidates are from the same food group and used in at least 100 recipes.
