What each ingredient does

Prunes
Provide the main flavour and body, and their juice gives the jelly its colour and sweetness.
Gelatine
Sets the juice into a firm, sliceable jelly as it cools.
Sugar
Sweetens the tart prune juice and adds to the jelly's flavour.

The step that matters

Heating the gelatine mixture until it boils. Gelatine must be fully dissolved into the hot juice before cooling; if it is not, the jelly may set unevenly or fail to set firmly.
