Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Boil the bread and milk together, stirring until smooth.

  2. Add the cheese and butter, stirring over heat for 1 minute.

  3. Remove from heat and add mustard, seasoning, and egg yolks.

Bake

  1. Beat the egg whites to stiff peaks and gently fold them into the mixture.

  2. Pour into a greased baking dish and bake for 15 minutes at 400°F (200°C).

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air and make the soufflé rise and turn light.
Egg yolks
Add richness and emulsify the base, helping it set into a tender custard structure.
Bread
Boiled with milk to form a thickened base that gives the soufflé body and structure.
Cheese
Adds savory flavor and fat, enriching the base as it melts into the mixture.
Butter
Adds fat and richness to the base, improving flavor and tenderness.

The step that matters

Fold the egg whites gently. Stiff egg whites hold air that makes the soufflé rise. Overmixing deflates the foam, so the soufflé bakes flat and dense.

Swap the mustard

How well each one fits the dish's main ingredients (cheese, milk, egg, butter, bread, pepper):

  1. Capsicumfits better
  2. Potatofits better
