Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale white bread crumbs
Thicken the liquid as the starch absorbs water and swells during simmering.
White wine
Adds acidity and aroma that brighten the sweet, starchy broth.
Lemon
Adds bright citrus aroma and acidity from its zest.
White sugar
Adds sweetness that balances the wine and lemon.

The step that matters

Adding the bread crumbs just before boiling. Bread crumbs added to water that is already boiling can clump and stay lumpy. Stirring them in as the liquid heats lets them disperse evenly and hydrate into a smooth, thickened soup.
