What each ingredient does

Chickens
Provide the meat and flavour that form the body of the soup.
Crumb of penny loaves
Soaked and pounded, it thickens the soup and gives it body.
Egg yolks
Bind the pounded mixture and add richness and smoothness to the soup.
Cream
Adds richness and a smooth, velvety texture to the finished soup.

The step that matters

Heat the cream until it boils. Cream can scorch on the base of a pot and turn grainy if left unattended, so stirring continuously keeps it smooth before it goes into the soup.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, egg, cream, barley):

  1. Nutmegfits better
  2. Celeryfits better
  3. Garlicfits about as well
  4. Parsleythe original
