What each ingredient does

Flounders or small flat fish
Break down during stewing to give the soup its body and fish flavour.
Perch
Adds flesh that breaks down during stewing, enriching the body and flavour of the soup.
Veal broth
Forms the liquid base that carries the flavour of the fish and vegetables.
Butter and flour
Form a roux that thickens the soup and gives it a smoother, richer texture.
White wine
Adds acidity and aromatic depth to balance the rich broth.

The step that matters

Stew until the fish can pass through a coarse sieve. The fish must break down fully so its flesh and bones release flavour and body into the broth. Stewing too briefly leaves a thin soup, while overcooking can make the liquid cloudy and muddy in flavour.
