What each ingredient does

Cucumbers
Form the main body of the pickle, becoming crisp-tender once salted and drained.
Onions
Add sharpness and sweetness that mellow during the vinegar soaking.
Coarse sea salt
Draws water out of the vegetables, firming them and reducing excess moisture before pickling.
Boiling vinegar
Provides the acidity that preserves the vegetables and gives the pickle its tang.

The step that matters

Draining after salting. Salt draws water out of the cucumbers and onions over several hours. Draining fully removes that liquid so the vegetables stay firm and the vinegar is not diluted in the jar.

Swap the ginger

How well each one fits the dish's main ingredients (cucumber, onion, vinegar, pepper):

  1. Garlicfits better
  2. Tarragonfits better
  3. Dillfits better
  4. Gingerthe original

Fit is the average pairing score against cucumber, onion, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
