Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream together the sugar and butter until white.

  2. Beat the yolks of the eggs and stir them in, followed by the beaten egg whites.

  3. Add the sifted flour and mace or nutmeg to taste.

  4. If desired, stir in the citron or powdered almonds and brandy just before pouring into pans.

Bake

  1. Pour the batter into pans lined with buttered paper and bake immediately in a 400°F (200°C) oven for about 20 minutes.

  2. If the cake bakes too quickly, cover it with thick paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and add richness and a tender crumb.
Eggs
Yolks enrich and set the crumb, while beaten whites add lift and lightness.
Sifted flour
Provides the structure that holds the cake together as it bakes.
Sugar
Creamed with butter to aid aeration and add sweetness and browning.

The step that matters

Bake immediately after pouring the batter. Beaten egg whites and creamed fat trap air that begins to escape if the batter waits, so the cake may rise less and turn denser.
