  1. Combine flour with other ingredients to thicken the soup.

  2. Add cold stock to form a stiff paste.

  3. Moisten occasionally with beef broth.

  4. Pass the mixture through a sieve.

  5. Add the gravy from the stewed heart and enough beef broth to reach desired quantity.

  6. Boil the mixture and season with cayenne and salt.

  7. If too thin, add flour and butter until it reaches a creamy consistency.
