Stewed Oystees

Ingredients

Directions

  1. Remove gills from oysters and rinse them in their own liquor.

  2. Strain the liquor and thicken it with flour and butter in a stewpan.

  3. Add mace, lemon peel cut into threads, and whole white pepper, preferably in a piece of muslin.

  4. Simmer the stew gently; do not let it boil to avoid hardening the oysters.

  5. Serve with sippets of bread.
