Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, watery body that the salt and vinegar work on.
Onions
Add sharp, aromatic flavour that softens during pickling.
Boiling vinegar
Adds acidity that tangs the vegetables and helps preserve them.

The step that matters

Drain after salting. Salt draws water out of the cucumbers and onions. If they are not drained well, the extra liquid dilutes the vinegar and leaves the pickles soft and watery.

Swap the ginger

How well each one fits the dish's main ingredients (cucumber, onion, vinegar, pepper):

  1. Garlicfits better
  2. Tarragonfits better
  3. Dillfits better
  4. Gingerthe original

Fit is the average pairing score against cucumber, onion, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
