Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Chop the kidney and fat of cold veal, apple, candied orange and lemon peel, and fresh currants.

  3. In a bowl, combine the chopped ingredients with wine, cloves, brandy, and sugar.

  4. Fill pastry shells with the mixture.

  5. Bake until golden brown.
