Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bitter almonds
Provide the main almond flavor once pounded and steeped in the cream.
Cream
Carries the flavor and, with its fat, gives the frozen ice cream a rich, smooth texture.
Powdered loaf sugar
Sweetens the base and lowers its freezing point, keeping the ice cream softer and scoopable.

The step that matters

Boil the pounded almonds gently in the cream. Gentle heat extracts flavor without scorching the cream or making it grainy. Boiling too hard can scorch the milk solids and sugar, so the flavor stays weak or tastes burnt.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, rose):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Walnutfits less well

Fit is the average pairing score against cream, sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
