What each ingredient does

Ground coffee
Supplies the flavor compounds that hot water dissolves out to make the extract.
Boiling water
Acts as the solvent that extracts flavor from the grounds and carries it into the drink.

The step that matters

Limit the brewing time to about 5 minutes. Hot water left in contact with the grounds too long pulls out excess bitter compounds, so the extract turns harsh. Coarser grinding shortens the extraction, which is why the step asks for a grind adjustment when brewing runs long.
