Graham and Corn Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Grease the baking pans thoroughly.

  3. In a bowl, mix unbolted flour, rye flour, and Indian corn meal.

  4. Add brown sugar or molasses to taste.

  5. Incorporate lard or butter to make the mixture light and tender.

  6. Allow the dough to rise until it is slightly less than doubled in size.

  7. Pour the mixture into the prepared pans and bake until golden brown.
