Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browned slowly in butter, they add sweetness and deep savoury flavour to the sauce.
Brown flour
Cooked into the butter and onions, it thickens the liquid into a smooth sauce.
Butter
Fat that softens and browns the onions and carries flavour through the stew.
Broth or water
Liquid that moistens the flour and turns the mixture into a sauce.
Sugar
Adds a little sweetness that balances the savoury onions and beef.

The step that matters

Browning the onions. Onions should turn golden without burning. Slow cooking over low heat develops sweetness and colour, while scorched onions taste bitter and spoil the whole sauce.
