Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the bulk of the dish and softens into tender pieces as it boils.
Baking soda
Raises the water's alkalinity, which helps the cabbage turn soft and tender.

The step that matters

Boil the cabbage until tender. Cabbage needs a full, steady boil for the whole hour so its tough fibers soften fully. Stopping early leaves it firm and fibrous, and the sulfur compounds that cause strong cooking odor are released more during long boiling.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Cabbagethe original
  4. Cucumberfits less well

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
