What each ingredient does

Mutton
Gives the broth its meaty flavour and savoury body as it simmers.
Rice or barley
Releases starch as it cooks, thickening the broth and adding body.

The step that matters

Cook slowly for 3 to 4 hours. A slow, gentle simmer draws flavour from the mutton and bones without making the broth cloudy or greasy. Boiling hard emulsifies fat into the liquid and toughens the meat.

Swap the nutmeg

How well each one fits the dish's main ingredients (mutton, rice, pepper, celery):

  1. Turmericfits better
  2. Parsleyfits better
  3. Cuminfits better
  4. Nutmegthe original

Fit is the average pairing score against mutton, rice, pepper, celery. Candidates are from the same food group and used in at least 100 recipes.
