What each ingredient does

Rye meal
Adds a dense, hearty structure and a deep, earthy flavor to the bread.
Cornmeal
Gives the bread a coarse, crumbly texture and body.
Molasses
Adds sweetness, dark color and moisture to the bread.
Baking soda
Reacts with the molasses and milk to lift and lighten the batter.
