Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a large pot, combine the tomatoes and water.

  2. Add the beef bone or cold steak for flavor.

  3. Bring to a boil, then simmer for 30 minutes.

  4. Remove the beef bone or steak and stir in the corn starch until dissolved.

  5. Cook for an additional 5 minutes, stirring frequently.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and sweet tomato flavor of the soup.
Corn starch
Thickens the liquid into a smoother, heavier soup when heated.
Beef bone or cold steak
Adds savory meaty flavor to the water as it simmers.

The step that matters

Stirring in the corn starch. Cornstarch must be fully dissolved in liquid before or as it is added, then heated, so it thickens evenly; added as dry lumps it clumps and leaves gritty pockets in the soup.

Swap the tomato

How well each one fits the dish's main ingredients (corn, beef):

  1. Potatofits about as well
  2. Capsicumfits about as well
  3. Tomatothe original
  4. Carrotfits less well

Fit is the average pairing score against corn, beef. Candidates are from the same food group and used in at least 100 recipes.
