What each ingredient does
- Beef stock
- Forms the liquid base of the soup and carries the flavour of the vegetables.
- Tomatoes
- Provide the main tomato flavour, acidity and body of the soup.
- Butter
- Browned with the flour to add a nutty, toasted aroma and thicken the soup.
- Flour
- Thickens the soup as a roux with the butter.
- Onions
- Add savoury sweetness and aroma to the base as it simmers.
- Sugar
- Balances the acidity of the tomatoes with a touch of sweetness.
The step that matters
Browning the butter and flour. Butter that is browned too far turns bitter, and flour stirred into hot fat must be mixed thoroughly so no lumps form and the roux thickens the soup evenly.
Swap the tomato
How well each one fits the dish's main ingredients (beef, carrot, turnip, onion, butter, flour, sugar):
- Leekfits better
- Parsnipfits better
- Chivefits better
- Tomatothe original
Fit is the average pairing score against beef, carrot, turnip, onion, butter, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
