Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Layer the dish

  1. Butter a pie dish.

  2. Cover the bottom with fine bread crumbs.

  3. Add a layer of oysters and season with pepper and coarse sea salt.

  4. Alternate layers of crumbs and oysters until you have three layers.

  5. Finish with a layer of crumbs on top.

  6. Dot the top with small pieces of butter.

Bake

  1. Finish the edge with small oblong pieces of bread dipped in butter.

  2. Bake at 350°F (175°C) for 30 minutes.

Prepare shell oysters

  1. If using shell oysters, wash and strain them thoroughly.

What each ingredient does

Oysters
Form the main filling and provide the dish's briny, savory flavor.
Very fine bread crumbs
Absorb oyster juices and add structure between layers, then brown on top.
Butter
Adds richness and helps the top crumbs brown in the oven.
