Why it works: Beef and pork match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 5,690 recipes mention both. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓

Beef Oe Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Mix and bake

  1. In a large bowl, combine the ground beef or veal, chopped salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and eggs. Mix the ingredients thoroughly.

  2. Transfer the mixture to a loaf pan and bake for 1 hour.

  3. Let it cool before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Forms the main body of the loaf and gives it its meaty structure.
Salt pork
Adds fat and moisture, keeping the loaf from drying out as it bakes.
Boston crackers
Soak up liquid and help bind the meat so the loaf holds together.
Isinglass
Sets as it cools, helping the loaf hold its shape when sliced.
Eggs
Bind the mixture and help set the loaf as it cooks.

The step that matters

Let it cool before slicing. Meat loaf is still loose and soft when hot. Resting it lets the proteins and the gelatin-like isinglass set, so slices hold together cleanly instead of crumbling.

  2. Thymebetter flavor fit
  3. Nutmegbetter flavor fit
  4. Clovethe original

Fit is the average pairing score against beef, pork, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
