Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the loaf

  1. In a large bowl, combine the crushed Boston crackers, eggs, salt, pepper, sage, and chopped veal, and mix all ingredients well until fully combined.

  2. Pack the mixture tightly into a deep tin pan.

  3. For added flavor, top with butter before baking.

Bake and serve

  1. Bake in the preheated oven for 1 hour.

  2. Allow to cool, then slice thinly to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and provides its meaty texture and flavor.
Eggs
Bind the chopped veal and crackers together and set as the loaf bakes.
Boston crackers
Absorb moisture and add bulk, helping the loaf hold together when sliced.
Dried sage or summer savory
Adds the herbal aroma that flavors the loaf.

The step that matters

Pack the mixture tightly into the pan. Tight packing removes air pockets so the loaf holds its shape and slices cleanly rather than crumbling. Loose packing can leave gaps and a weak, uneven texture.

Swap the sage

How well each one fits the dish's main ingredients (egg, pepper, veal, butter):

  1. Parsleyfits better
  2. Sagethe original
  3. Nutmegfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against egg, pepper, veal, butter. Candidates are from the same food group and used in at least 100 recipes.
