Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Head of meat
Forms the bulk of the terrine and supplies gelatin that binds the set loaf.
Tongue
Adds rich meat flavour and body to the mixture.
Heart
Adds dense meat texture and savoury depth to the filling.
Liver
Adds deep, rich flavour and a softer texture to the mixture.
Onions
Add sweetness and aroma that balance the rich meats.

The step that matters

Boil the head until very soft. The meat must be cooked until tender so it breaks down easily when chopped and pressed. Undercooked meat stays tough and will not bind into a firm, sliceable loaf.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (meat, liver, pepper, onion):

  1. Thymefits better
  2. Garlicfits better
  3. Parsleyfits about as well
  4. Sagethe original

Fit is the average pairing score against meat, liver, pepper, onion. Candidates are from the same food group and used in at least 100 recipes.
