What each ingredient does

Green tomatoes
Form the bulk of the pickle and absorb the salted, spiced brine.
Coarse sea salt
Draws water out of the vegetables so they drain and firm up.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Sugar
Balances the sharp acidity with sweetness.
Horseradish
Adds a sharp, pungent bite that carries through the pickle.
Mustard seed
Contributes a sharp, pungent flavour to the spiced syrup.

The step that matters

Draining after the salt and after the vinegar. Salt draws water out of the vegetables, and removing that liquid keeps the pickle crisp and stops it from diluting the vinegar brine. Draining thoroughly at each stage matters for texture and keeping quality.

Swap the tomato
