Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Grated potato thickens the liquid and supplies starch that feeds the yeast.
Hops
Hops add bitterness and aroma and help preserve the starter.
Sugar
Sugar gives the yeast an easily used food source so it becomes active and foams.
Good yeast
Live yeast is the leavening agent that ferments the starter and raises the bread.

The step that matters

Let it stand until a thick foam rises on top. The foam shows the yeast is active and fermenting. Using the starter before it foams means weak leavening and dense bread.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
