Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a bowl, combine milk, eggs, and enough flour to create a batter that is not very stiff.

  2. Stir in melted butter, yeast, baking soda, and salt if using.

Bake

  1. Preheat gem irons on the stove and lightly grease them.

  2. Pour the batter into the heated gem irons.

  3. Bake in a hot oven at 400°F (200°C) for about 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness, helping the batter set as it bakes.
Yeast
Produces gas that raises the batter, giving the gems a light, open crumb.
Baking soda
Reacts to lift the batter and help the gems rise and brown.
Melted butter
Adds fat for tenderness and flavor, and helps browning in the hot oven.
Flour
Forms the gluten and starch structure that sets the gems as they bake.

The step that matters

Pour the batter into the heated gem irons. Pouring into hot, lightly greased irons starts the crust setting immediately, so the batter rises well and releases cleanly instead of sticking or spreading.
