Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked in milk until tender, it forms the soft body of the croquette.
Milk
Cooks into the rice, giving it moisture and a creamy texture.
Eggs
Bind the cooled mixture so the pieces hold their shape.
Sugar
Adds sweetness and helps the golden colour develop during frying.

The step that matters

Allow the mixture to cool before adding the eggs. Eggs added to a hot mixture can scramble and lose their binding power. Cooling first lets them mix in smoothly and set the pieces when heated.

Swap the lemon
