What each ingredient does

Eggs
Bind the batter and add structure and richness as the cake sets in the oven.
All-purpose flour
Provides the starch and gluten network that gives the cake its structure.
Brown sugar
Sweetens the batter and adds moisture and a caramel-like depth of flavour.
Unsalted butter
Adds fat for tenderness and richness, and carries flavour through the batter.
Seeded raisins
Add chewy sweetness and moisture to the finished cake.

The step that matters

Fold in the fruit just before pouring into pans. Heavy fruit sinks to the bottom if the batter is overworked or left standing, and overmixing develops gluten that toughens the crumb. Folding gently keeps the fruit evenly distributed and the texture tender.

Swap the currant

How well each one fits the dish's main ingredients (flour, sugar, butter, raisin, almond, rose, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against flour, sugar, butter, raisin, almond, rose, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
